It’s mid-July, so I wanted to compile some fabulous recipes for summer. What makes them fabulous? It’s based on a few key factors, including the seasonality of produce, the ease of preparation (from low to no effort in the kitchen), the minimal heat required, kid-friendliness, and great flavor! No one wants to slave in a hot kitchen when it is 80+ degrees, but you also shouldn’t have to sacrifice on flavor and health!
Taking this into consideration, I present to you 15 fabulous recipes for summer that I highly recommend!
Recipes for Summer
Easy Pasta Salad- This is a favorite because it requires little effort, you can customize it to what you have on hand, and it keeps well for when you need a snack or light meal.
Hearty Black Bean Sweet Potato Burger- Great for women’s health, filling, and fun to have around if you like burgers during the summer.
Kachumber Salad- The base of this is cucumbers, cilantro, and mint, and is a staple in Pakistani and Indian homes.
Lebanese Lentil Salad- Uses fresh herbs, summer tomatoes, and Middle Eastern spices that bring this dish to life!
Spicy Asian Coleslaw and Easy Slaw- Slaw is a staple in the summer for a lot of families in America. My two takes on it ditches the mayo, vinegar, and other ingredients you can do without.
Rice Paper Spring Rolls- Rice paper spring rolls are truly versatile in that you can make them with whatever filling you prefer. Throw in leftovers or wrap them around a salad, spring rolls can be a heat-free, veggie-packed dinner.
Herby Pesto Recipe- This pesto is a great way to get more greens into your diet. Adding in a flavorful green like arugula and blending it down with other greens (spinach, basil, mint) can make for a really flavorful take on pesto. This is great over gluten-free, corn-free noodles!
Aloe Cooler Three Ways- For when you need a refreshing pick-me-up for skin, digestion, and hydration.
Vegan Raita- Spiced Coconut Yogurt Sauce- Raita is a cooling cucumber and spice yogurt sauce that adds another dimension to burgers or skewers. Try it with my BBQ Chaat Maple Vegetable Skewers.
Spicy Tomato Salsa- Make with summer tomatoes and pair with Siete chips, tacos, or even on pizza!
Fat-Free Eggplant Dip- This is a flavorful, fat-free babaganoush recipe that requires minimal effort in the kitchen: Roasting an eggplant and then blending with all other ingredients in a blender. Eggplant’s peak availability is from late summer to early fall.
Guacamole- Versatile in its application, filling, and full of healing ingredients. Guacamole is such a crowd pleaser. Nearly everyone likes guacamole. You can serve it with crudités like celery sticks, cucumbers, carrots or peppers! If you want to make it even more of a crowdpleaser, serve it with crackers or chips!
Banana Nice Cream- The creations you can make with this dessert are endless! Add dates to make it chunky, maple syrup to make it sweeter, or lemon juice and passion fruit for a sour flavor profile. Add in a serving of barley grass juice powder if you like for balance and mineral salts… banana nice cream is a nourishing blank canvas you can get creative with.
