Vegan three bean chilli

Chili is a quintessential part of American cuisine. I created this Vegan Three Bean Chili to remove the meat from the recipe and to support those healing from chronic illness. It pairs really well with so many other foods on our blog I hope you will take the time to explore and bookmark these recipes to enjoy over and over.

Ingredients

  • 3 cups strained tomatoes (28 oz can or jar)
  • 1 tablespoon avocado/ coconut oil or use water or vegetable broth 
  • 3 cups chopped onions
  • 3 garlic cloves, minced or pressed
  • 1 generous teaspoon ground cumin
  • 1 generous teaspoon chili powder
  • 2 green bell peppers chopped
  • 1½ cups drained cooked black beans (or 14-ounce can)
  • 1½ cups drained cooked red kidney beans (14-ounce can)
  • 1 cup drained cooked garbanzo beans (14-ounce can)
  • Salt to taste

Directions

Heat the avocado or coconut oil in a large saucepan. If you are cooking oil free, you can use water or vegetable broth to sauté as well.

Sauté onions with garlic, cumin and chili powder.  When the onions are soft, stir in the bell peppers and sauté for 2-3 minutes more.

Chop the tomatoes ] and add them to the pan. Stir in the beans, and heat thoroughly on low heat. Cover and simmer for a few minutes for flavors to meld.  Add salt to taste. 

In the picture, you see the Vegan Three Bean Chili topped with my kids favorite Cashew Cheese. Also this is one of the fillings I use with my Jackfruit Mushroom Taco Meat on Taco Tuesdays. The taco recipe has several parts and when you layer them all together you get an incredible burst of flavors, textures and enjoyment!

Hi Muneeza, what other bean do you recommend in place of garbanzo beans in the chili?
