Golden Herbed Smashed Potatoes
My golden herbed smashed potatoes with cashew cheese recipe is a great dish to prepare for Memorial Day or July 4th! If you are serving a group and you would like to make sure everyone LOVES your dish, be sure to add in a little almond flour, or a light amount of avocado oil and or cashew cheese sauce.
In the video I shared on Instagram, I prepped this dish for a party for teenagers, so I added in a little oil, the almond flour and the cashew cheese sauce. My daughter said that the smashed potatoes were INHALED. The amazing thing about this dish is that it can be made simply as a healing meal, or it can be dressed up and made more decadent to wow a crowd.
Let’s break down some ingredients and their health benefits.
Potatoes
It’s a common misconception that potatoes are a “white food” because they often have a white interior. I find this funny, because bananas, apples, pears and guavas are amongst many other foods that are white on the inside. They should be judged instead by their whole for- potatoes have a wide variety of colors that they come in such as gold, purple, red, brown, blue, black.
Just because they might be white on the inside doesn’t detract from their overall nutritional profile. They are still nutrient-dense and a healthy and versatile food to eat. Potatoes are grown in the earth and draw their nutritional profile from it, this makes them a great food for grounding!
Parsley
Parsley is nature’s #1 fighter against acidic body systems. Did you know that your lymphatic system can become the most acidic system in your body? That is because it can become a dumping ground, so to speak, when your liver and other organs become overburdened with toxins, heavy metals, and excess fats. If you are trying to clean up your lymphatic system parsley is a great herb to bring into your diet.
It is also highly beneficial to those fighting any sort of issues with their mouth- gum disease, tooth decay, and dry mouth.
Paprika
This ingredient is often overlooked for its healing qualities. Paprika is loaded with with Vitamin C and Anthony William Medical Medium says that paprika has nine times the amount of vitamin C as tomatoes. Paprika helps to aid in digestion and circulation and helps to normalize blood pressure and improves the elasticity of the veins, arteries and other vessels in our body. Paprika also helps to warm you up when you are feeling cold.
Rosemary
This is an incredible powerhouse herb that has been known for its healing qualities for thousands of years. According to Anthony William, rosemary is highly antiseptic, one of the most powerful herbs against staph infections and a great expectorant to remove mucous from the lungs and gut. It is very helpful because it contains anti-histamine compounds that can aid in migraines and asthma. Here in this recipe, it adds a medicinal yet flavorful kick to the golden herbed smashed potatoes!
Garlic
Garlic is another great food to bring in for grounding- this is due to its ability to drive out parasites, fungi, worms, bacteria, and viruses. All of these negative actors take energy from our bodies because they are not working for us but against us, and garlic has the ability to come to our defense.
The Golden Herbed Smashed Potatoes pair really well with our Jackfruit Kebabs recipe!

Golden Herbed Smashed Potatoes
Equipment
- 1 Steam basket
- 1 Baking tray
Ingredients
- 8-10 medium yukon gold potatoes Steamed
- 2 tbsps almond flour
- 1 Bulb garlic
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tsp smoked paprika
- 2 tsps rosemary chopped for garnish
- 2 tsps chives chopped for garnish
- 1 tsp parsely chopped for garnish
- Sea salt to taste
Instructions
- Steam potatoes for approximately 30 minutes, which is steamed ¾ of the way through. The reason is that they will cook up in the oven when you roast the potatoes and yet you still want them soft enough to smash.
- While you are steaming the potatoes, wrap the garlic bulb in parchment and roast it for about 30 minutes. It is optional at this point to add a spray of avocado oil if you are choosing to make this for a party. This step can also be done ahead of time. My air fryer and oven are the same appliance, so I like to get the garlic roasted ahead of time, so it is then available to air fry the potatoes.
- Once steamed, lay the potatoes out on a baking tray lined with a clean wax free parchment paper.
- Take a fork and smash them all the way through.
- Season with the garlic powder, evenly over all the potatoes. And repeat with the onion powder and smoked paprika.
- Turn the air fryer on and set the temperature to 430 F.
- Dust the almond flour on top which provides a textured crunch. If you are remaining low or no fat, you can leave this ingredient out. The dish still tastes amazing without it.
- Squeeze out the garlic from the bulb you roasted earlier. The garlic should be soft and fragrant. Spread the cloves evenly over the smashed potatoes.
- Add the rosemary on top.
- The smashed potatoes are ready for air frying and your air fryer will likely be at the right temperature by now. Air fry for approximately 10 minutes until golden brown on top.
- Remove the potatoes from the oven, turn them over, and return to the oven for another 3 - 5 minutes until golden brown on the bottom. If you are using oil, spray the potatoes lightly one more time when you turn them over.
- Once they are done, garnish with chives and parsley.
- Add a little cashew cheese sauce on top to serve (optional and can be made without the additional fat).
