Where eggs are typically called for in recipes, flax eggs can often be used in their stead. When flax meal and water are combined in a small bowl and left to rest for 10-15 minutes, the mixture starts to congeal. It is this texture that resembles an egg and allows for flax eggs to replace them. I discovered the flax egg trick years ago and never thought it’d end up with its own recipe blog, but so many people keep asking for it as an easy reference, and I wanted to deliver for them!
Vegan Baking With Flax Eggs
Vegan baking is a near-daily occurrence in my household. Since all our recipes are egg-free, it is helpful to know this trick! While you won’t be whipping up a meringue, knowing how to make flax eggs will take you far with simple recipes that need help binding like pancakes and cookies.
Chia seeds can also be used to make a “chia egg”, but in my experience, the flax egg works better than the chia egg. There are several egg replacement options used in vegan baking, but I’ve found the flax egg to be the best option to come close to the texture and taste of traditional baked goods.
Flax seeds are high in Omega-3 fatty acids and add a better nutrient profile to your recipes than eggs ever could. They are not as high in fat as eggs and nowhere near as high in cholesterol, so they naturally easier on your heart and liver – a perfect egg replacement.
Eggs: Feeding Disease
Healing from chronic sickness or an autoimmune disease does not mix with eating eggs. The reason is that eggs provide fuel for the bacteria and viruses that create sickness in our bodies, making our recovery to health prolonged. They also harbor unproductive estrogens that build up in our organs, and the viral neurotoxin that is created when viruses eat eggs is more intense (creating more nerve pain).

Equipment
- 1 small bowl
- 1 hand whisk
Ingredients
- 1 tbsp ground flax meal
- 3 tbsp water
Instructions
- Mix together and let it rest until slightly congealed, about 10-15 minutes.
- Use like you would a normal egg in baking or cooking.
