This Raw Pad Thai Noodle salad is the cold version of one our favorites at home…and it’s Medical Medium® friendly!
Ingredients:
1 zucchini, spiralized
1 cucumber, spiralized
2 carrots, spiralized
4 cloves garlic, minced
1 thumb-sized piece of galangal or ginger, minced
1 red bell pepper, thinly sliced
1 rib of celery, thinly sliced
3 green onions, thinly sliced
2-3 Cups bean sprouts
1 Cup fresh cilantro, lightly chopped
1 Cup raw cashews or peanuts, crushed (omit for fat free)
½ Cup fresh basil, torn
½ lime, wedges to serve
Ingredients for Pad Thai Dressing:
½ Cup raw honey
½ Cup coconut aminos
2 Tbsp tamarind paste
2 Tbsp date sauce
½ tsp cayenne
½ tsp garlic powder
½ tsp onion powder
Ingredients for Pad Thai Red Chili Paste:
8 cloves garlic
1 large onion
1 1-inch piece of ginger
½ Cup coconut sugar
2 Tbsp raw honey
1 Tbsp chili flakes (extra hot or use fresh hot pepper, habanero works great)
½ cup coconut aminos
3 Tbsp lime juice
2 Tbsp tamarind paste
Directions:
Firstly, prep and chop all the salad ingredients – celery, scallions, bean sprouts, fresh cilantro, fresh basil. Then, place them in a bowl.
Next, spiralize all veggies you are using into the same bowl (if you are using cucumber, place in a separate bowl because it can release a lot of water into the salad).
Now, on to prepping the dressing.
Place all dressing ingredients into a bowl and thoroughly mix with a whisk.
Then your dressing is ready!
Finally, drizzle dressing on top and then sprinkle with black sesame seeds and raw cashews (if you choose to use them). While some people love peanuts on top (you can find a clean brand with no salt added), if you are not watching your salt then you can just use roasted peanuts.
The Thai Red Chili Paste can be used for a dipping sauce or drizzle a little over the salad…it’s also great over steamed potatoes (very versatile). In case you don’t want to make it from scratch, Thai Kitchen Red Curry Paste is a great option.
