Prep and chop all the salad ingredients - celery, scallions, bean sprouts, fresh cilantro, fresh basil. Place them in a bowl.
Spiralize all veggies you are using into the same bowl (if you are using cucumber, place in a separate bowl because it can release a lot of water into the salad).
Prep the dressing.
Place all dressing ingredients into a bowl and thoroughly mix with a whisk.
Your dressing is ready!
Drizzle dressing on top and then sprinkle with black sesame seeds and raw cashews (if you choose to use them). Some people love peanuts on top - you can find a clean brand with no salt added (if you are not watching your salt you can just use roasted peanuts).
The Thai Red Chili Paste can be used for a dipping sauce or drizzle a little over the salad…it’s also great over steamed potatoes (very versatile). If you don’t want to make it from scratch, Thai Kitchen Red Curry Paste is a great option.
