Gluten-Free Vegan Graham Crackers

Instructions
 

  • Prepare two baking sheets covered with parchment.
  • Preheat the oven to 325 F.
  • Whisk the ⅓ cup of the coconut sugar and 1 tbsp of cinnamon.
  • In another bowl, add both flours  - the all-purpose and the cassava flour and add in the rest of the coconut sugar, cinnamon and add in the ground ginger
  • Then add in the coconut oil, maple syrup, and vanilla extract. Mix well until a thick dough forms. Once the dough starts to form, I prefer to use my hands to continue to form the dough.
  • Very slowly add in the cold water and mix well each time you add the water. Using your hands to mix the water into the dough is easier than folding it using a wooden spoon or a spatula.
  • As the dough becomes a little sticky, place it in a bowl covered with a plate or a silicone cover to rest in the fridge for about 30 minutes.
  • Once the dough is ready for rolling, I recommend using a silicone baking mat as a clean surface for working the dough.
  • Add some cassava flour to the baking mat and roll the dough until it is covered in cassava flour. Roll the dough out to about ¼ inch thickness.
  • Score the dough. I cut them into approximately 1 ½ inches by 3 inches crackers.
  • Space out the crackers evenly on the baking sheets.
  • Sprinkle with the cinnamon sugar mixture you prepared in step 3.
  • Bake for 10 minutes and then flip them and bake for another 5 minutes. They should turn golden brown when ready.
  • On half the graham crackers, add a square of the homemade marshmallow.
  • Pour some of my clean easter chocolate sauce on top of the marshmallow. Another option for chocolate that is easier than making chocolate sauce is to use Hu Kitchen chocolate chips
  • Place a graham cracker on top and bake for a few more minutes until the center becomes gooey and the chocolate has melted.
  • The chocolate is OPTIONAL. Many people who are healing chronic illnesses do not do well with adding chocolate to their diets. The s’more tastes amazing without the chocolate. I have two daughters who dislike chocolate and love just the graham cracker and marshmallow combination by itself.

Creating this recipe was so much fun. My girls loved being the taste testers, especially when I gave them the s’mores for the first time.

While these gluten-free vegan graham crackers are a treat for your taste buds, they also contain many healing properties.

Coconut

Coconuts are a life-changing food. Medical Medium states in his book, Life-Changing Foodss, that “coconuts enhance the power of anything they touch,” which means, when combined with healing foods, coconut supercharges those benefits. Coconut water is very similar to human blood. Coconuts help with insomnia by providing the right blend of mineral salts for neurotransmitter production in our brains. “Coconut meat is highly antipathogenic,” and “when coconut drops from the stomach into the intestinal tract, it kills off any pathogen it touches.”

Cinnamon

Cinnamon has the highest antioxidant strength of all food sources – far exceeding that of any fruit or vegetable. This potent spice has been known to help shorten the duration of the flu and get rid of congestion and mucus from the body. Additionally, it can help stop yeast infections, candida, and menstrual cramps.

Cinnamon has excellent anti-cancer properties and has been shown to help reduce the growth of leukemia and lymphoma cells within the body.

The smell of cinnamon alone can help make you more alert and focused, as it boosts memory and cognitive function.

Ginger

Ginger contains powerful anti-inflammatory compounds called gingerols that reduce pain, inflammation, and swelling. While ginger is an amazing spice that naturally heals both inflammation and infection, ginger is best known for its incredible ability to heal digestive upset and nausea. For centuries, ginger has been used to safely ease indigestion, menstrual cramps, motion sickness, and heartburn. Isn’t it amazing that a spice we take for granted to give a warm, deliciously spicy flavor to our foods can contain so many healing properties?

Maple Syrup

The combination of minerals and glucose in maple syrup makes it vital to the liver – an instant fuel source.
