Spicy Mock-scow Mule

Ginger Ale
- 1 lb fresh ginger root
- 1.5 liters coconut water
- 1 cup sparkling water
- 1 lemon or lime
- 2-4 Tbsp honey or maple syrup
Spicy Mock-scow Mule
- ½ oz chili (jalapeno works well)
- ½ oz coconut sugar syrup
- 4 oz ginger ale
- lime wedge for garnish
Instructions
Ginger Ale
- Bring coconut water to high heat in a small stove-top pot.
- Peel and finely grate fresh ginger. Add to hot coconut water. Let boil for 5 minutes, then bring to a simmer for 20 minutes.
- Strain into a mason jar using a fine mesh strainer.
- Add sweetener to mason jar while still hot, mix.
- Let cool, then store in the fridge.
- Once ginger liquid is chillled, shake jar then pour 4oz into a glass.
- Squeeze 1/2 a lemon or lime into glass and add sparkling water.
Spicy Mock-scow Mule
- Add a teaspoon of chopped chilli and a teaspoon of coconut sugar to a saucepan. Add enough water to cover. Let simmer over gentle heat for 10 minutes. Leave to cool. Strain and pour into heatproof jar.
- Fill a glass mug or similarly sized glass with ice. Pour in the syrup and lime juice. Fill the glass with ginger ale and gently swirl it with a spoon once to mix.
- Garnish with a lime wedge and a ginger slice
Moscow mules are all the rage at the holiday cocktail party scene this time of year. Time to set a new trend, this Mock-scow Mule will be all the rage. This spicy, fresh mocktail will surprise even the most discerning palate.

1 lemon or lime, squeezed
2-4 Tbsp honey or maple syrup

½ oz coconut sugar
½ oz fresh lime juice (about ½ medium lime)
4 oz ginger beer
1 slice of ginger for garnish
1 lime wedge for garnish
