These gluten-free, fat-free banana muffins are 100% Medical Medium® approved, but the best part is they are fluffy, moist, and mouth-wateringly delicious.

Instructions
 

  • Pre-heat Oven at 350F
  • Prepare your muffin pan - put baking cups into the muffin pan.
  • In a bowl, mash the bananas and mix in the apple sauce
  • Add in the flour, baking powder, cinnamon, nutmeg, vanilla and baking soda.
  • Fold ingredients until you have an even mixture.
  • Spoon into the muffin pan, filling the baking cups.
  • Bake for 24 minutes. Before removing, check with a knife (should come out clean).
  • When the knife test is clean, muffins are ready to remove from the oven.
  • Sprinkle with crushed pecans and walnuts before serving! (Optional)

I am so excited to share this gluten-free fat-free banana muffin recipe with you! I was with my youngest daughter, and on a whim, we decided to make banana muffins – I wasn’t even sure I had all of the ingredients I needed, but we decided to kind of wing it.

Oh boy, did it pay off!…thank goodness I wrote down the measurements as we went along (something I’m trying to get better about so I can share recipes with you).

These banana muffins came out fluffy, moist, and mouth-wateringly delicious. The best part is they are fat-free, gluten-free, egg-free, dairy-free, and of course, 100% Medical Medium® approved. But not only that, these banana muffins are full of powerful healing foods.

Banana

A banana contains about 76% water, making it a fantastic electrolyte food. They are also packed with vitamins and minerals, such as vitamin C, B6, potassium, copper, and manganese. A high glucose content makes bananas an excellent brain food and muscle builder. So as you can imagine, bananas are a perfect food for an athlete – they replenish energy and instantly revitalize the body. Bananas are a great option to take on the go – easy to stick in any purse or bag without worrying about a mess.

This incredible fruit contains very strong antifungal and antibiotic compounds and has the ability to stop a virus in its tracks due to protease inhibitors. Furthermore, bananas promote nutrient absorption and assimilation due to high levels of fructooligosaccharides (FOS). In addition, they support the natural bacteria in the bowel, which keeps your digestive tract healthy and immune system strong.

Apples

Apples have incredible anti-inflammatory properties that help to reduce your viral and bacterial load. The phytochemicals in apples are quite literally brain food – feeding neurons and increasing electrical activity. In addition, they contain phytochemicals that are responsible for heavy metal and radiation detoxification, as well as glutamine and serine–amino acids that help remove MSG from the brain. A true brain food!

Red apples, in particular, are a very alkaline fruit that has the ability to quench thirst on a cellular level by providing living water to support the liver’s ability to hydrate.

Equally important, the fruit acids in apples (both malic and tartaric acids) help cleanse the liver by dispersing toxic films that build up inside the liver’s storage banks. Furthermore, apples starve out bacteria, yeast, mold, other funguses, and viruses from the liver. This makes red apples an incredible liver detoxifier.

Cinnamon

Cinnamon has the highest antioxidant strength of all food sources – far exceeding that of any fruit or vegetable. This potent spice has been known to help shorten the duration of the flu and get rid of congestion and mucus from the body. Additionally, it can help stop yeast infections, candida, and menstrual cramps.

Cinnamon has excellent anti-cancer properties and has been shown to help reduce the growth of leukemia and lymphoma cells within the body.

The smell of cinnamon alone can help make you more alert and focused, as it boosts memory and cognitive function.
