Gluten-Free Fat-Free Banana Muffins
These gluten-free, fat-free banana muffins are 100% Medical Medium® approved, but the best part is they are fluffy, moist, and mouth-wateringly delicious.

Gluten Free Flour (I like
Bob's Red Mills Gluten Free All purpose Flour
)

Oat Flour

ripe bananas

coconut sugar
⅓

apple sauce
(if you don't have apple sauce, add one more banana)

baking powder (aluminum free)
1 ½
tsp
cinnamon powder

nutmeg powder

vanilla powder

baking soda

pecans
, crushed (optional*)

walnuts
, crushed (optional*)
*If you want to make this Fat-Free, omit the pecans and walnuts as the garnish

Instructions
Pre-heat Oven at 350F
Prepare your
muffin pan
- put
baking cups
into the muffin pan.
In a bowl, mash the bananas and mix in the apple sauce
Add in the flour, baking powder, cinnamon, nutmeg, vanilla and baking soda.
Fold ingredients until you have an even mixture.
Spoon into the muffin pan, filling the baking cups.
Bake for 24 minutes. Before removing, check with a knife (should come out clean).
When the knife test is clean, muffins are ready to remove from the oven.
Sprinkle with crushed pecans and walnuts before serving! (Optional)
