Perfectly Fluffy Millet

- 1 cup millet
- 2 cups water or vegetable broth
Instructions
- Toast the millet in a skillet for about 3 - 5 minutes, stirring often.
- Place the millet and water or vegetable broth in a heavy-bottomed pot and bring to boil.
- Once boiling, bring the heat down to a simmer and cook for 18 - 20 minutes or until water is fully absorbed. Turn the heat off.
- Let it sit for 5 - 7 minutes with the lid on after it is cooked.
- Then fluff with a fork and serve.
- If you are using this millet for the Vegetable Biryani Three Ways, then keep it aside, while you make the Birayani vegetable masala.
I LOVE the nutty flavor of millet. Because I use it frequently, I had to learn how to make perfectly fluffy millet.
Here’s my secret…
First, I toast the millet before boiling it. This simple step is what so many overlook, but it is the key to drawing out the nutty flavor of the grain once cooked. As you toast the millet, there is a warm, comforting aroma that envelopes the kitchen. This is one of my favorite smells to waft out of the kitchen! My children always know when I’m making millet – they love the comforting aroma as much as I do.
You can make your millet without toasting as well, but I do not recommend skipping this step. The amount of flavor that emerges with toasting is what makes the most delicious millet!
Millet is one of the healthiest grains you can bring into your diet. It is the one that most people with chronic illness can tolerate well.
Also, for even more flavor, I recommend using vegetable broth. The vegetable broth adds flavor to the millet. I especially recommend using vegetable broth if you are making this millet for my Vegetable Biryani 3 Ways.
