Healing benefits of Potatoes

Potatoes feature highly in the diets of those healing using Medical Medium information. Potatoes are not the problem – it’s the butter, dairy, cream, sour cream, deep frying which is bad for us. If you eat potatoes without any of the added fat, it is a super healing food. And no, it does not cause weight gain. Potatoes are the food that is the highest in bio available Lysine. Lysine fights viruses and so including potatoes in your meals is a powerful way to fight the Epstein Barr Virus! Potatoes are great for balancing our blood sugar and also help to calm down our nervous systems. Potatoes are virtually fat free. So without any added overt fat, the body is able to utilize the starch in them more effectively. 

For a spicy twist on an old favorite, try this Medical Medium friendly recipe!

 

Ingredients

8 medium potatoes, steamed 

1 red onion, finely chopped 

2 cups cherry tomatoes, chopped 

3 cups peas, thawed 

3 radishes, sliced 

1 lime, juiced 

2 tsp chipotle pepper (use less if needed) 

2 tsp smoked paprika 

Sea salt to taste or use dulse flakes as a salt alternative (linked my favorite one)

1 head butter leaf lettuce or romaine lettuce

Microgreens (mixed or any kind you like)

 

Directions

Once the potatoes are steamed, mash them using a potato masher. Add all the other ingredients in and mix thoroughly. Serve with butter leaf or romaine lettuce or sprouts and microgreens. I paired this Spicy Potato Pea mash with my Garlic Maple Roasted Cauliflower. It can also be a part of a buddha bowl and served with a mixture of greens and veggies.

Ingredients
