8 medium potatoes, steamed
1 red onion, finely chopped
2 cups cherry tomatoes, chopped
3 cups peas, thawed
3 radishes, sliced
1 lime, juiced
2 tsp chipotle pepper (use less if needed)
2 tsp smoked paprika
Sea salt to taste or use dulse flakes as a salt alternative (linked my favorite one)
1 head butter leaf lettuce or romaine lettuce
Microgreens (mixed or any kind you like)
Once the potatoes are steamed, mash them using a potato masher. Add all the other ingredients in and mix thoroughly. Serve with butter leaf or romaine lettuce or sprouts and microgreens. - 3 radishes sliced
- 1 lime juiced
- 2 tsp chipotle pepper (use of needed)
- 2 tsp smoked paprika
- sea salt to taste (or use dulse flakes)
