Muneeza’s Candied Cashews Recipe
This candied cashews recipe is a Medical Medium® friendly sweet treat that will have everyone begging for more!
Course Snack
Servings 4 servings
Ingredients
- 2 Cups cashews
- 1 Cup coconut sugar
- ½ tsp coriander powder
- ½ tsp cinnamon powder
- ¼ tsp all spice
- ½ Cup water
Instructions
- Place cashews and coconut sugar in ½ Cup water and bring to a boil over high heat.
- Mix all spices in a separate bowl.
- Once boiling, lower the heat to a simmer, stirring frequently. As the water evaporates, the sugar crystalizes around the nuts (5-6 minutes).
- Add spices into the pot and mix, trying to evenly coat all nuts. The sugar will eventually caramelize (1-2 minutes).
- Remove from heat and place on parchment paper to cool.

These nuts are great to use in Asian recipes like our Pad Thai Noodle Salad, they also make a lovely gift around the holidays (or anytime).

I made these today & have questions. Mine looked nothing like yours! Do you take these out while the sugar syrup is still a little wet? It took ~ 25 min for the syrup to reduce. The nuts were starting to burn before it reduced enough that I thought they wouldn’t clump together in a sticky mass. Yes, I stirred very frequently. I dumped them out while they still looked a little wet. They did dry & break apart. In the pic above, yours look dry, as tho they were baked. Do you use a wide skillet or a sauce pan? My husb said they tasted great. I am fat free & on a mono cleanse, so can’t try them. They smelled good!
Hi Marintha! Sorry it took me a while to reply! Yes, we take them out while the candied syrup is wet. Its ok if they clump – as they cool they will form clusters. And that is what you want. Just take them out and let them cool, they become dry after cooling a bit. So glad your husband enjoyed them, if you make them again when you’re eating nuts let me know what you think! – Muneeza

Geetanjali! Maybe you can use the same recipe with sunflower or pumpkin seeds. We have done that before and they are delicious! can you eat seeds?
