For an excellent flare to your summer luncheon spread, try this Kachumber salad. The base of the Kachumber salad is made of cucumbers, cilantro, and mint. It is served in Pakistani and Indian restaurants and homes regularly and is a summer favorite!
Kachumber salad is both refreshing and incredibly healing, a perfect addition any day.
Cucumbers
Cucumbers are an alkalizing food that hydrates on a deep cellular level through its beneficial electrolytes. This hydration factor makes cucumber juice ideal for bringing down a high fever. They are rich in vitamins A, C, K, magnesium, silicon, and potassium and are packed with antioxidants and enzymes that help your food digest and kill tapeworms and parasites.
The skin of the cucumber is rich in chlorophyll making it a powerful anti-cancer food – particularly helpful with estrogen-based cancers such as breast, uterus, prostate, and ovarian.
Cucumbers are an excellent diuretic, helping waste excrete through the kidneys as it dissolves uric acid that contributes to the creation of kidney and bladder stones. Additionally, their high silica content promotes healthy, strong, beautiful hair and nails.
Cilantro
Cilantro is an incredible herb! It helps to pull heavy metals and detoxify the liver. Being antiviral, antibacterial, and anti-worm, cilantro helps to suppress the level of pathogens in the body. Mint
Mint is a mild-tasting herb with powerful healing benefits. Packed with vitamins, minerals, and antioxidants, mint is excellent for digestive issues such as nausea, indigestion, ulcers, halitosis, and flatulence. Additionally, mint can help relieve headaches, sinus congestion, sore throats, stress, and anxiety.
Furthermore, mint helps promote blood circulation which makes it a wonderful aid for cleansing and weight loss.
Kachumber Salad (Pakistani-Indian)

- 3 medium-sized cucumbers, peeled & diced
- 1 red onion, diced
- 1 large tomato, diced
- 2-3 radishes, finely chopped
- 2 limes, juiced
- ½ cup cup mint, chopped
- ½ small hot pepper, finely chopped (optional)
- 2 cups cilantro, chopped
- 1 tsp raw honey
- 1 tsp ground cumin
- 1 tsp cayenne (optional)
Instructions
- Once all the vegetables are prepped, place them in a salad bowl. The more finely chopped the veggies are, the better. This allows for them to marinate more quickly and the flavor gets through the veggies better.
- Add the spice powders and then top with lime juice and honey.
- Mix well and let it sit for about 15 - 20 minutes.
- Once marinated, it is ready to serve.
