Incredible Low-Fat Zucchini Caramelized Onion Sauce

My low-fat zucchini caramelized onion sauce makes an excellent dip and can turn the ordinary potato fry into an extraordinary experience for your taste buds.

 

This low-fat zucchini caramelized onion sauce is easy to make and extremely versatile. It is great to have this on hand – makes a wonderful addition to hors d’oeuvre platters.

 

The best part about this low-fat zucchini caramelized onion sauce is the extraordinary healing properties found in the ingredients…you will never feel guilty when indulging in this incredible healing food.

 

Onions

Onions contain sulfur compounds that strengthen the immune system, brain, and nervous system.  These compounds also help to detoxify heavy metals from the body such as mercury, cadmium, and lead.

 

Furthermore, onions are the highest food source of quercetin, a potent antioxidant that can help prevent blood clots, asthma, sinus infections, bronchitis, atherosclerosis, and diabetes.

 

The onions in this low-fat zucchini caramelized onion sauce add incredible flavor!

 

Zucchini

Zucchini is one of the most mild and easily digestible foods; it is also highly alkaline. Zucchini is packed with vitamins A, C, and B-complex in addition to minerals like iron, zinc, potassium, and manganese. It also helps reduce constipation and bloating because it is high in fiber and low in calories.

 

Zucchini also helps fight against aging as it has abundant poly-phenolic antioxidants. Additionally, it is rich in potassium which helps normalize blood pressure helping to prevent strokes and heart attacks by maintaining fluid balance

 

Furthermore, zucchini contains anti-inflammatory compounds which help conditions such as asthma, rheumatoid arthritis, and fibromyalgia. It is also known to be helpful with other conditions such as hypertension, cataracts, macular degeneration, atherosclerosis, diabetes, edema, and multiple sclerosis

 

Cashews

Cashews are great for lowering blood pressure, supporting heart health, preventing gallstones, reducing migraines, providing energy boosts, strengthening bones, and promoting healthy skin and hair. Cashews have a lower fat content than most other nuts. They also support the nervous system. So bringing in this recipe in the form of cashew cheese is not only just dairy free but also provides numerous health benefits! If you are remaining low-fat or fat-free, I would definitely go easy on this sauce because it is easy to overdo! This is especially applicable to those who are working on healing their livers!

Cashews provide a great base for this low-fat zucchini caramelized onion sauce.

 

Maple Syrup

The combination of minerals and glucose in maple syrup makes it vital to the liver – an instant fuel source.

Shopping List

2 cups yellow or sweet onions, thinly sliced

¼ cup, ⅓ cup or ½ cup cashews, soaked (depending on how much fat you desire)

¾ cup, ⅔ cup or ½ cup zucchini, chopped

1 tsp onion powder

½ tsp garlic powder

½ tsp dried dill OR ½ tsp smoked paprika

1 medium sized lemon, juiced

6  tbsp maple syrup

Sea salt to taste

Instructions
 

  • Caramelize the onions per the recipe and instructions here.  Please use the maple syrup to caramelize until you get a delicious smelling aroma. You have to cook them down for a considerable amount of time
  • I like to use very low fat in this recipe, so I use only ¼ cup of cashews. You can use a little more if you desire and I change the proportion of the zucchini that is used in the recipe.
  • Once you have decided how much fat you are using in the recipe, add to a blender with the corresponding amount of zucchini and the onion powder, garlic powder, dill and lemon juice. Blend until smooth.
  • Alternatively for a different flavor, you can swap out the dill for smoked paprika and the sauce tastes so different! We love both flavors equally! Blend the ingredients well in both cases.
  • Add sea salt if desired or you can leave it out as well. The recipe is super flavorful without salt.
  • Pour the sauce out into a bowl and mix in the caramelized onions.
  • Serve.
