Healthy Chips Ahoy Cookie Recipe

- 1 ½ cups Oat Flour
- 1 cup Bob's Red Mills Gluten Free All purpose Flour
- 1 cup coconut sugar
- ½ cup Arrowroot starch
- 1 tsp baking soda
- ⅓ cup coconut oil
- 6 Tbsp unsweetened apple sauce
- 2 tsp non-alcohol vanilla extract
- ½ cup vegan chocolate chips (or carob chips if avoiding chocolate)
Instructions
- Preheat oven to 350 F.
- Prepare two baking sheets lined with non-waxed parchment paper.
- In a mixing bowl add all the dry ingredients. Mix evenly.
- Then add the coconut oil, applesauce and vanilla extract.
- A thick dough will form. If your dough is not forming together, add 1 tsp of applesauce.
- Mix in the chocolate or carob chips (whichever your preference).
- Use a small sized ice cream scoop to scoop the dough onto the baking sheet.
- Flatten with a spatula.
- Bake for 6 minutes. Then rotate the sheets and bake for 6 more minutes or until the cookies are golden and firm. Depending on the size of your cookies you may need to bake them for a longer or shorter amount of time.

I love the memories of coming home from school and the house smelling of freshly baked chocolate chip cookies. That first bite when they are fresh from the oven, there is just nothing like it. I wanted to be able to recreate that for my own children.
This healthy chips ahoy cookie recipe has been child-tested and approved. It took me a few tries, but I managed to recreate my favorite childhood treat and couldn’t wait to share it with you.
The amount of oil I use in this recipe is the absolute lowest amount of oil that can be used and still have the recipe work – far lower than any other recipe out there. Although these cookies are not the most healing recipe I have created, they do still have healing properties and are 100% Medical Medium® compliant.
Apples
Apples have incredible anti-inflammatory properties that help to reduce your viral and bacterial load. The phytochemicals in apples are quite literally brain food – feeding neurons and increasing electrical activity. In addition, they contain phytochemicals that are responsible for heavy metal and radiation detoxification, as well as glutamine and serine–amino acids that help remove MSG from the brain. A true brain food!
Red apples, in particular, are a very alkaline fruit that has the ability to quench thirst on a cellular level by providing living water to support the liver’s ability to hydrate.
Equally important, the fruit acids in apples (both malic and tartaric acids) help cleanse the liver by dispersing toxic films that build up inside the liver’s storage banks. Furthermore, apples starve out bacteria, yeast, mold, other funguses, and viruses from the liver. This makes red apples an incredible liver detoxifier.
Coconut
Coconuts are a life-changing food. Medical Medium states in his book, Life-Changing Foods, that “coconuts enhance the power of anything they touch,” which means, when combined with healing foods, coconut supercharges those benefits. Coconut water is very similar to human blood. Coconuts help with insomnia by providing the right blend of mineral salts for neurotransmitter production in our brains. “Coconut meat is highly antipathogenic,” and “when coconut drops from the stomach into the intestinal tract, it kills off any pathogen it touches.”
