Gluten-free French crepes are an ultra-thin pancake that can be filled as you desire – sweet or savory. While French crepes are traditionally made using flour, eggs, milk, and sugar…I have turned this into a Medical Medium® compliant recipe – none of the harmful ingredients and all of the warm, soft, melt-in-your-mouth flavor.
Did you know that the French crepe actually has its own day?
February 2nd is known as “le Jour des Crepes” – the day of crepes. This dates back to the year 472 when crepes were offered to French Catholic pilgrims visiting Rome for Candlemas by Pope Gelasio I.
The American pancake, a distant relative of the French crepe, has become a staple in most households across the US. French crepes differ from American pancakes because they don’t contain a leavening agent, causing the batter to rise. However, like the French crepe, the pancake can be a tasty and useful mode of delivery for healing food – like a fresh fruit topping.
I have a friend whose father was very good at making crepes. In fact, as my friend tells it, this was literally the only meal her father knew how to cook. So, it was always a crepe night whenever he was in charge of dinner. My friend said she loved when her father had to make dinner, and to this day, when she eats crepes, it takes her right back to the warm memory from her childhood and her dad’s dinner nights.
The treat of breakfast for dinner is not lost on today’s children either. In fact, I have made my gluten-free French crepes with wild blueberry compote for dinner many times… and my girls are delighted every time I do. This is such a simple and fast go-to on a busy evening.
I typically have the dry ingredients for the batter prepared, so all I have to do is add the wet ingredients, cook, and serve. This is such a lifesaver on those busy nights when you have too many moving pieces – simple, quick, and an absolute crowd-pleaser every time!
While French crepes are not the ultimate healing food, my gluten-free French crepe recipe will not harm you, and as I mentioned above, they are a great delivery symptom for a variety of healing foods, from sweet to savory.
For example, my wild blueberry compote is a favorite in our house with French crepes. This dish is incredibly healing and satisfies that sweet tooth.

Gluten-Free French Crepes

- 1 cup Bob's Red Mills Gluten Free All-purpose Flour (if you cannot find Bob’s Red Mill, then use Gluten-Free Oat Flourinstead)
- 1 cup chickpea flour
- 1 Tbsp Arrowroot starch
- ¼ cup coconut sugar
- 2 tsp vanilla powder
- 2 cups filtered water
Instructions
- Place all the dry ingredients in a bowl.
- Add the water and mix.
- For best results, use a griddle to cook.
- You can use a ceramic pan, but you may need to use a little oil to cook because it may stick to the pan. In this case, I recommend a very slight (even a few drops of coconut oil).
- When cooking, wait until the edges become golden brown, and then they are ready.
- Serve with Wild Blueberry Compote
