While the weather turns cooler, I love having soups. They are so warming and soothing, aren’t they? My recipe for Simple Vegetable Soup is perfect for a chilly, fall day. The herbs are flavorful and the vegetables are simply packed with vitamins, nutrients, and minerals. Especially when balancing cooked and raw foods, I love this recipe!

Simple Vegetable Soup
Serves 4
- 2 tablespoons coconut oil
- 1 onion, chopped
- 2 celery stalks, chopped
- 2 garlic cloves, chopped
- 1 fennel, sliced
- 2 large carrots, chopped
- 2 cups green beans, chopped
- 1 tablespoon Herbes de Provence
- 1 32-ounce package vegetable broth
- 1 cup chopped parsley
- Juice of 1 lemon
Directions:
Firsly, melt coconut oil in a large soup pot over medium heat. Then add onion, celery, and garlic. Sauté for about 5 minutes. Then add fennel, carrots, green beans, and Herbs de Provence. Continue to sauté for an additional 10 minutes. Finally, add vegetable broth and simmer for about 10 minutes until all vegetables are tender. Turn off the heat and mix in chopped parsley and lemon juice before serving.
