Simple Vegetable Soup Recipe

While the weather turns cooler, I love having soups. They are so warming and soothing, aren’t they? My recipe for Simple Vegetable Soup is perfect for a chilly, fall day. The herbs are flavorful and the vegetables are simply packed with vitamins, nutrients, and minerals. Especially when balancing cooked and raw foods, I love this recipe!

Remember, eating for health does not mean sacrificing flavor and comfort foods. Whole healing is about spiritual and emotional wellness just as much as physical wellness. For that reason, I want to share my favorite recipes that support all aspects of wellness with you.

It is amazing to be able to eat foods such as this, yummy, satiating and flavorful, and KNOW that they are healing us.

Simple Vegetable Soup

Serves 4

  • 2 tablespoons coconut oil
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 2 garlic cloves, chopped
  • 1 fennel, sliced
  • 2 large carrots, chopped
  • 2 cups green beans, chopped
  • 1 tablespoon Herbes de Provence
  • 1 32-ounce package vegetable broth
  • 1 cup chopped parsley
  • Juice of 1 lemon

 

Directions:

Firsly, melt coconut oil in a large soup pot over medium heat. Then add onion, celery, and garlic. Sauté for about 5 minutes. Then add fennel, carrots, green beans, and Herbs de Provence. Continue to sauté for an additional 10 minutes. Finally, add vegetable broth and simmer for about 10 minutes until all vegetables are tender. Turn off the heat and mix in chopped parsley and lemon juice before serving.

  2. Could you tell us how to make or get this that you have in the recipe? 1 32-ounce package vegetable broth… Thank you!

    1. For purchasing a packaged vegetable broth, I recommend buying organic. Also, make sure the only ingredients are water, vegetables, herbs, and spices. Look for one that does not contain citric acid. The Medical Medium healing broth recipe would also work.

  3. Soups are so easy to make. You can put anything in them you want. And don’t even necessarily need to have broth. I’ve been making soups for many years.

  4. Packaged vegetable soup is a challenge to find pure.
    It sounds like the ingredients of fresh veggies covers it.
    Is there a packaged vegetable broth you’ve found you would recommend please?
