Even those of us living a healing lifestyle deserve to indulge every once in a while, and there are ways to do it that do not interrupt your body’s healing process!
There are endless creative ways to create sweet treats that satisfy taste and texture and fill the kitchen with the familiar sweet smell of something delicious baking in the oven.
My daughter has cracked the code yet again on a familiar recipe known for its wonderful taste and aroma but not typically made with healthful ingredients. Rayyaan has done it again!
Do you remember baking with your mother, father, grandmother, grandfather, cousins, or aunts and uncles? For many Americans, I’ve discovered that blueberry muffins are one of those classic recipes that everyone remembers smelling in the oven growing up.
As someone who grew up with my family’s sweet treats and traditions, I was delighted to discover muffins—first in their usual form and later as a healing treat. I admit, I LOVE blueberry muffins, especially when my talented daughter makes them.
WILD BLUEBERRIES
If there’s one food in existence that every one of us should eat daily, it’s the wild blueberry. They have the highest proportion of antioxidants of any food produced on planet Earth and are the most effective adaptogen (foods that help the body overcome stress and adversity) known to us.
Wild blueberries help to protect the body against every toxin in existence and effectively remove those toxins from the body, including the brain, liver, and other organs. As stated by respected health author Anthony William, there is more information stored in a wild blueberry plant than on the internet. This is partly due to the wild blueberry’s ability to adapt and rise again through any challenge – inclement weather, disease, or wildfires. Native American cultures recognized the wild blueberry as the first plant to return after a fire destroyed a landscape.
While wild blueberry muffins sound like a light and comforting treat without much impact, including these berries – even in baked goods – is an incredible support for your health. Do not underestimate the power of this healing food, and take a moment to acknowledge this beautiful gift offered by God and Mother Nature every time you take a bite.

Ingredients
Muffin Mix
- 1 ½ cups gluten-free oat flour
- 1 tsp aluminum-free baking powder
- ¼ cup cashew butter or sunflower butter if allergic to cashews
- ¼ cup unsweetened applesauce
- ⅓ cup coconut sugar
- ¾ cup coconut milk
- ¾ cup fresh or frozen wild blueberries if frozen, thaw completely
Muffin Glaze
- 1 cup powdered cane sugar
- 2 tbsp fresh lemon juice
Instructions
- Preheat oven to 350 degrees Fahrenheit.
- Mix the oat flour and baking powder together in a large bowl.
- In a smaller bowl, mix the cashew butter, applesauce, coconut sugar, and coconut milk together until smooth and evenly mixed.
- Add the wet mixture to the center of the dry ingredient mixture and stir until fully combined.
- Fold wild blueberries into your batter.
- Place 12 baking cups into ceramic muffin baking dish and fill with 12 even portions of muffin battter.
- Bake for 20 to 22 minutes, until the center of the muffins are done and a toothpick comes out clean. Remove muffins from baking dish and set on a wire rack to cool.
- While the muffins are cooling, whisk the powdered cane sugar and lemon juice together in a small glass bowl until smooth and free of sugar clumps.
- Dip each muffin into the glaze to coat the top of the muffin and allow glaze to dry.
- Serve and enjoy!
