It is the holidays and we are ALL looking for yummy recipes that are healthy and nutritious as well – enter the Holiday Apple Cake! I created this recipe that we’ve been using for my girls as a favorite birthday cake recipe for a long time! Because it looks, tastes and smells like a regular cake, this recipe also works for those who may not be following your health lifestyle. What’s more, this is a Gluten-Free, Egg Free, Dairy-Free, Nut-Free and Refined Sugar Free Recipe!
Later, you can even add on to the recipe and serve it with the Medical Medium Coconut Whipped Cream or the Medical Medium Date Caramel Sauce.
Alternatively, my family is loving the new caramel sauce from Sweet Apricity and it makes for a rich addition to the Apple Cake.
Lowering Fat in this Cake
If you would like to lower the amount of coconut oil in this cake halve it by taking out a half cup and adding the equivalent amount of apple sauce.
Ingredients
- 1 cup coconut oil
- 1 cup maple syrup
- 1 ⅔ cups applesauce (You can also use an applesauce that is blended with a fruit)
- 4 tsps vanilla
- 3 cups gluten-free flour (I like Bob’s Red Mill GF all purpose flour mix)
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp cinnamon
- 1 cup of apple, peeled and chopped into small pieces(about 1 apple, use any apple except Red Delicious)
Directions
- Firstly, preheat oven to 350 degrees. Grease and flour pans
- Then, in a large bowl mix together the oil, maple syrup, applesauce, & vanilla
- In a separate bowl, mix together the GF flour, baking powder, baking soda, salt, cinnamon & apple.
- Then mix the contents of the two bowls together. But do not over mix.
- Pour the batter into the greased and floured pan
- Bake at 350 for 40-50 minutes.
While it is baking you can make the toppings – either the coconut whipped cream or the date caramel sauce, or both! I hope you enjoy this Holiday Apple Cake as much as we do!
