It is just totally amazing when you can feed a craving for healthy, life-giving food!!! I have a recipe for you today that does just that.
Many of you have asked me for a recipe using kelp. At first, kelp may seem like one of those vegetables that you just don’t quite know what to do with. I totally get it! That’s what makes this recipe so much fun. It combines the mineral-replenishing power of kelp with the nerve and bone-strengthening power of almonds to create a creamy, nutty, rich, delicious and satisfying meal. I am so excited for you to try it!!
But before we get to the recipe, let’s talk about the health benefits because amazing health is our goal after all. That’s why we’re here!
According to Medical Medium, “Kelp replenishes mineral deficiencies in the body.” In addition, it also helps to protect and heal the thyroid.
Did you know that Medical Medium says iodine “acts as an antiseptic for the thyroid?” Atlantic sea vegetables, like kelp, are an abundant source of iodine. And in a world where our soil is depleted of iodine, we need to get it where we can.
This is because iodine protects the thyroid when it is under attack from viruses, like EBV. Just keep an eye out for Atlantic kelp that comes from the east coast; the best to eat comes from the coast of Maine.

COLD KELP NOODLES WITH CREAMY ALMOND BUTTER SAUCE
Serves 2
1 12-oz package kelp noodles
¼ cup almond butter
1 garlic clove
1 lemon, juiced
½ orange, juiced
¼ cup water
1 tsp raw honey
1 tsp toasted sesame seed oil
½ tsp sea salt
1 large carrot, shredded
1 red pepper, julienned
1 scallion, chopped
SOAK THE NOODLES:
Soak the kelp noodles in a bowl of water with the lemon juice for 10 to 15 minutes before mixing with the sauce. This will make the noodles softer and easier to eat.
BLEND THE SAUCE:
Add the almond butter, garlic clove, lemon juice, orange juice, water, raw honey, sesame seed oil, and sea salt to a high-speed blender or food processor. Mix until smooth.
COMBINE:
Add sauce to the drained noodles. Mix well and top with shredded carrot and scallion.
