Indian Masala Chickpea Omelette

Indian masala chickpea omelet is a delicious, desi-style omelet that is super quick and easy to whip up. Flavored with Indian spices and vegetables, this Indian masala chickpea omelet works well for any meal of the day.

 

A desi-style omelet is a one-layer unfolded omelet with crispy, bronzed edges and a soft middle. With a mixture of spices and vegetables, this dish is made across India and is universally loved. I knew I needed to find a way to make this satisfying dish Medical Medium® friendly…which meant removing the eggs.

 

Indian masala chickpea omelet is an incredible dish because you can tailor it to your taste buds – it is easily adaptable. My family likes certain vegetables in it, but you can feel free to add more. I find this recipe an easy way to get vegetables into a meal.

 

While a typical Indian masala omelet is made using eggs, I have transformed this recipe into a truly healing meal by removing the eggs but maintaining the delicious flavor. The ingredients used are incredibly powerful healing tools.

 

Cilantro

Cilantro is an incredible herb!  It helps to pull heavy metals and detoxify the liver.  Being antiviral, antibacterial, and anti-worm, cilantro helps to suppress the level of pathogens in the body.

Additionally, cilantro can provide significant adrenal support and has been shown to help balance blood glucose levels and stave off weight gain, brain fog, and memory issues.

 

Onions

Onions contain sulfur compounds that strengthen the immune system, brain, and nervous system.  These compounds also help to detoxify heavy metals from the body such as mercury, cadmium, and lead.

 

Furthermore, onions are the highest food source of quercetin, a potent antioxidant that can help prevent blood clots, asthma, sinus infections, bronchitis, atherosclerosis, and diabetes.

 

Tomatoes

Tomatoes are such a powerful healing food. They contain their own variety of vitamin C that is bioavailable to the liver and lymphatic system. Tomatoes also support the immune system, helping it to remain strong to fight pathogens.

 

Tomatoes contain fruit acids that help rid sludge from the gallbladder and reduce the size of gallstones, helping to keep the gallbladder healthy. The mineral content in tomatoes is abundant, these can reach the deep inner core of the liver, helping to prevent disease where it commonly begins. Additionally, tomatoes are high in lycopene which is a favorite nutrient of the liver. The liver uses lycopene to prevent cell damage, and to help detox red blood cell safely.

Hot Pepper

Hot Peppers are very healing to the body. They are generally high in vitamin C and they help a lot with colds, flus, and bronchitis. They also boost circulation (ever see someone get red in their face after eating a hot pepper?) and helps with the heart as well. Hot peppers can help to create hydrochloric acid in the stomach and can stimulate peristaltic motion of the gut – think, have you ever needed to ‘go’ after eating hot peppers?

 

Turmeric

Turmeric is a powerful anti-inflammatory, antioxidant, antiseptic, and anti-depressant. The primary component in turmeric is curcumin. Curcumin has incredible anti-cancer properties and has been shown to help prevent and inhibit prostate, skin, colon, mouth, esophageal, lung, stomach, pancreatic, liver, and breast cancer.

 

Turmeric is a powerful healing tool. It has been known to help purify blood, soothe respiratory conditions, improve liver function, support the circulatory system, regulate menstrual cycles, prevent cognitive diseases such as dimentia and Alzheimer’s, and heal gastrointestinal disorders.

 

As a powerful anti-inflammatory, turmeric has been shown to help significantly reduce the inflammation associated with arthritis and other auto-immune diseases such as lupus, irritable bowel syndrome, fibromyalgia, and chronic fatigue syndrome.

 

Additionally, turmeric is wonderful for digestion and help the body to digest fats/proteins while also helping to regulate blood sugar.

 

One of the most well-known properties of turmeric is it’s anti-aging effects. Due to the significant amount of antioxidants, turmeric has a fountain-of-youth quality – very beneficial to the skin.

 

Shopping List

2 cups chickpea flour

1 cup cilantro, chopped

1/2 cup onions, chopped

1/2 cup tomatoes, chopped

1 green chili, sliced

2 tsp cumin powder

1 tsp coriander powder

1/4 tsp Turmeric

1/4 tsp black salt

1 pinch asafoetida (hing)

Sea salt to taste

 

For the best results when cooking Indian masala chickpea omelet’s you will want to use a very hot Griddle, ceramic pan, or marbled pan like Daterra cucina because this recipe does not use oil. It is best to get your pan hot while you prep the batter for the pancakes.

 

Also, please note that this recipe will not work with any other flour or any other flour mixed into the chickpea flour. If you are South Asian, you may be familiar with gram flour. Gram flour is finer than chickpea or garbanzo bean flour and actually results in a lighter or fluffier omelet. If you wish to try gram flour, you can find it in your local Indian store or you can buy it here at www.pureindianfoods.com.

  • This recipe is best cooked on a hot griddle. If you have a griddle, put it on medium to high heat now.
  • If you do not have a griddle use a ceramic pan or a marbled pan like Daterra cucina to prevent sticking, because this recipe does not use oil. It is best to get your pan hot while you prep the batter for the pancakes.

  • Add the chickpea flour and water to a bowl and mix well until the lumps disappear.
  • Add the cilantro, onions, tomatoes and green chili and spices and mix thoroughly.
  • Using a ladle pour out the batter onto the griddle, forming 6 - 7 inch diameter circles.
  • Cook until the bottom is golden brown.
  • Flip and cook the other side until golden brown.
  • Serve with green chutney or Imli chutney.
