Cauliflower pizza crust (vegan, no cheese or eggs)
This vegan cauliflower pizza crust is made without cheese, eggs, or oil. Riced cauliflower, chickpea flour, a flax egg, fresh parsley, and dried herbs come together in a gluten-free crust ready for your favorite toppings.
Put the cauliflower in a food processor and process until it is fully riced.
Preheat the oven to 350°F.
Bring a pot of water to a boil. Add the riced cauliflower and cook for 5 minutes, then drain it well through a fine mesh strainer.
Let it cool for about 5 minutes.
Prepare a flax egg and let it sit for 5 minutes.
Add the cooled cauliflower to the flax egg, then add the oregano, basil, parsley, smoked paprika, and garlic.
Add the chickpea flour and tapioca starch and mix well until a dough forms. If the dough is too sticky, add a little more chickpea flour. If it is too dry, add a little water.
Once the dough is smooth, roll it out to about 9 to 10 inches across and about 1/4 inch thick.
Bake the crust for 5 to 10 minutes on one side, then flip it over and bake for another 3 to 5 minutes, until it is golden brown.
Add your toppings: tomato sauce, hummus, mushrooms, onions, tomatoes, olives, and anything else you love.
Put the pizza back in the oven for just 5 to 7 minutes.

Notes
Drain the cauliflower really well after cooking. The drier it is, the easier the dough is to roll out. Click this link to how to make a flax egg. If you need topping ideas, my Roasted Garlic and Sticky Mushroom Pizza is a family favorite.
