Ingredients

Tomatoes one the vine or plum tomatoes

onion, diced

garlic, crushed

vegetable broth

black pepper, freshly ground

arrow root starch to thicken

Instructions
Steam tomatoes in the steamer for about 20 minutes.
Once steamed, peel the skin off the tomatoes.
Sauté onion in 3 tbsp of vegetable broth.
After 1 - 2 minutes add in the crushed garlic and cook for 2 - 3 minutes.
Then add in 6 cups of vegetable broth.
Season with black pepper and sea salt, if using.
Using a hand blender puree the soup.
Add in the arrowroot starch to thicken.
Serve with a dollop of coconut milk or homemade cashew sauce. Omit if remaining fat-free.
Garnish with chopped basil and serve hot!
