Mylow-fat zucchini caramelized onion sauce makes an excellent dip and can turnthe ordinary potato fry into an extraordinary experience for your taste buds.

Ingredients
2Cupsyellow or sweet onions, thinly sliced
¼ cup, ⅓ cup or ½ cup cashews, soaked (depending on how much fat you desire)
Caramelize the onions per the recipe and instructions here. Please use the maple syrup to caramelize until you get a delicious smelling aroma. You have to cook them down for a considerable amount of time
I like to use very low fat in this recipe, so I use only ¼ cup of cashews. You can use a little more if you desire and I change the proportion of the zucchini that is used in the recipe.
Once you have decided how much fat you are using in the recipe, add to a blender with the corresponding amount of zucchini and the onion powder, garlic powder, dill and lemon juice. Blend until smooth.
Alternatively for a different flavor, you can swap out the dill for smoked paprika and the sauce tastes so different! We love both flavors equally! Blend the ingredients well in both cases.
Add sea salt if desired or you can leave it out as well. The recipe is super flavorful without salt.
Pour the sauce out into a bowl and mix in the caramelized onions.
