Prepare two baking sheets lined with non-waxed parchment paper.
In a mixing bowl add all the dry ingredients. Mix evenly.
Then add the coconut oil, applesauce and vanilla extract.
A thick dough will form. If your dough is not forming together, add 1 tsp of applesauce.
Mix in the chocolate or carob chips (whichever your preference).
Use a small sized ice cream scoop to scoop the dough onto the baking sheet.
Flatten with a spatula.
Bake for 6 minutes. Then rotate the sheets and bake for 6 more minutes or until the cookies are golden and firm. Depending on the size of your cookies you may need to bake them for a longer or shorter amount of time.
