This recipe is best cooked on a hot griddle. If you have a griddle, put it on medium to high heat now.
If you do not have a griddle use a ceramic pan or a marbled pan like Daterra cucina to prevent sticking, because this recipe does not use oil. It is best to get your pan hot while you prep the batter for the pancakes.
Also this recipe will not work with any other flour or any other flour mixed into the chickpea flour. If you are South Asian, you may be familiar with gram flour. Gram flour is finer than chickpea or garbanzo bean flour and actually results in a lighter or fluffier omelet. Add the chickpea flour and water to a bowl and mix well until the lumps disappear.
Add the cilantro, onions, tomatoes and green chili and spices and mix thoroughly.
Using a ladle pour out the batter onto the griddle, forming 6 - 7 inch diameter circles.
